New Data on upcycling potential of food industry side-streams

The Danish think tank ONE\THIRD just published an inspiration catalogue with new data on the potentials in upcycling side-streams from the food industry. By reinventing side-streams into resources, upcycling can help reduce food loss and waste and provide a solution to major food and sustainability issues. 

The catalogue identifies 13 high opportunity side-streams from the Danish production. The catalogue estimates volumes, valuable compounds and economic impact for each side-stream as well as showcasing inspirational cases.

For example, the catalogue estimates that upcycling rapeseed oil press cake in Denmark could provide enough protein to feed the total adult population for almost 2½ years. And likewise, the upcycling of apple and pear side-streams in Denmark could provide enough fibre for over 300.000 Danes every year. These are just a few example of the enormous potentials. The market for upcycled food is growing fast and is estimated to reach 97 billion USD in 2031.
