Most people make sweet dishes a couple of times a month, and mostly persons at the age from 25 to 34 years, according to food retailer chain Rimi Latvia and the survey company SKDS study on eating habits. The most popular culinary products that people like to cook for themselves in Latvia are breadcrumbs, cakes and fruit desserts. On the other hand, a survey conducted by Rimi concludes that cake batching is most often entrusted to mothers and wives and is most often cooked on birthdays (66%), but around half the population of those who bake cakes does not need a particular reason to do that and they are enjoyed batching on a daily basis.

The activity of inhabitants from LAG Land in Bloom confirm the importance of the traditions of cakes and sweets. The idea of the cake museum was born and bakery was established in the district of Baldone. Cakes and cake baking are also popular among LEADER project applicants: 3 LEADER projects have been submitted for cake baking field. Once cakes where baked in every second house, when it was not so easily to buy cakes at stores. Yet there are still alive traditions and recipes, for example, in the small Lēdmanes parish alone, 15 cake bakeries can be counted. Unfortunately, cake baking usually occurs in the so-called "gray zone" - hostesses accept orders, while the client pays the owner in cash.

The objective of the international co-operation project:
1. To collect ancient recipes for making cakes, to create new recipes and promote cake baking.
2. To encourage cake bakers to legalize their activities, thus to take care of their social security and promote the economic growth of the area.
3. To promote exchange of recipes locally and internationally.
4. To establish a long-term cooperation with local producers, get acquainted with local restaurants who would be interested in cooperating, and explore the local market by considering the potential for export.

Objectives: 

The objective of the international co-operation project:
1. To collect ancient recipes for making cakes, to create new recipes and promote cake baking.
2. To encourage cake bakers to legalize their activities, thus to take care of their social security and promote the economic growth of the area.
3. To promote exchange of recipes locally and internationally.
4. To establish a long-term cooperation with local producers, get acquainted with local restaurants who would be interested in cooperating, and explore the local market by considering the potential for export.

Common project actions:
1. Identify existing and potential cake bakers in the area by organizing a cake competition. International jury from the project cooperation partners will be created.
2. Winners of the Cake Competition will have the opportunity to gain an international experience, participate in the international cake festival organized by the partners and fight for international recognition.
3. Collect information in a digital or printed book.
