Objective of the project (native language): 

El Objetivo Principal consiste en el desarrollo de técnicas que permitan por un lado obtener nuevos coproductos a partir de las nueces de la DOP “Nueces de Nerpio” (Aceite de Primera Presión de Frío Crema de nuez tostada Emulsión de nueces Harina de torta de nuez) y por otro lado el establecimiento de una planta piloto para el aprovechamiento de los subproductos del proceso de transformación y de la recolección a fin de promover la economía circular, disminuir el impacto ambiental y mejorar la calidad de los productos finales por medio de la adición de los oligoelemento obtenidos de los residuos a los nuevos productos de la nuez, creando toda una nueva línea de productos alimenticios “Funcionales”

Objective of the project (in English): 

The Main Objective consists in the development of techniques that allow, on the one hand, to obtain new co-products from the walnuts of the PDO "Nueces de Nerpio" (First Cold Pressure Oil Toasted walnut cream Walnut emulsion Walnut cake flour) and on the other hand, the establishment of a pilot plant for the use of the by-products of the transformation and collection process in order to promote the circular economy, reduce the environmental impact and improve the quality of the final products through the addition of trace elements obtained from residues to new nut products, creating a whole new line of "Functional" food products

Este proyecto se centra en el desaroollo de técnicas que permitan obetener nuevos ecoproductos de alto valor añadido a a partir de nueces de la D.O.P "Nueces de Nerpio", con ello se transciende de una produccion primaria hacia una transformadora y por otro lado el establecimiento de una planta piloto para analizarar tanto frutos como los residuos de la recogida en busca de la extracción de  taninos y antioxidantes y la posibilidad de añadirlos a los nuevos ecoproductos.

Description of activities (in English): 

This project focuses on the development of techniques that allow obtaining new eco-products with high added value from walnuts of the D.O.P "Nueces de Nerpio", thereby going beyond a primary production to a processing and on the other hand the establishment of a pilot plant to analyze both fruits and harvest residues in search of the extraction of tannins and antioxidants and the possibility of adding them to new eco-products.
