Objective of the project (native language):

Il Piano di innovazione Convenient ha l’obiettivo di creare le condizioni per l'incremento e la conservazione della razza Ottonese grazie alla valorizzazione delle produzioni lattiero casearie. In questo modo si intende migliorare la sostenibilità economica dell’azienda agricola incentivandola a proseguire il ruolo di conservazione della razza.
Gli obiettivi specifici mirano a mantenere e/o aumentare il numero di bovini in azienda e la produzione di latte, valorizzandola dal punto di vista qualitativo e valutando la fattibilità di trasformare il latte in prodotti freschi direttamente in azienda.

Objective of the project (in English):

Convenient Innovation Plan aims to create the conditions for the increase and conservation of the Ottonese breed thanks to the valorisation of the dairy production, thus improving the economic sustainability of the farm encouraging it to continue the role of conservation of the breed.
The specific objectives aim at maintaining and / or increasing the number of cattle on the farm and the production of milk, valorising it from a qualitative point of view and evaluating the feasibility of transforming milk into dairy fresh products directly on the farm.

Le attività del piano si concentrano sullo studio delle caratteristiche del latte di razza Ottonese con l'obiettivo di approfondire le conoscenze in termini chimici, nutrizionali e tecnologici valutando nel contempo la possibilità di ottenere prodotti derivati di alta qualità. Lo studio è finalizzato alla valorizzazione del latte e dei prodotti da razza Ottonese per dare la possibilità all'azienda di aumentare il reddito e garantire pertanto il mantenimento e l'incremento della consistenza della razza.

Description of activities (in English):

The activities of the plan focus on the study of the characteristics of Ottonese breed milk with the aim of increasing the knowledge on chemical, nutritional and technological characteristics while evaluating the possibility of obtaining high quality derived products. The study is aimed at the valorisation of milk and products from Ottonese breed to give the farm the opportunity to increase the income and therefore guarantee the maintenance and increase of the consistency of the breed.

Convenient Innovation Plan aimed to create the conditions for the increase and conservation of the Ottonese breed thanks to the valorisation of the dairy production, thus improving the economic sustainability of the farm encouraging it to continue the role of conservation of the breed.
The specific objectives aimed at maintaining and / or increasing the number of cattle on the farm and the production of milk, valorising it from a qualitative point of view and evaluating the feasibility of transforming milk into dairy fresh products directly on the farm.
Based on the objectives of the Plan, the results obtained converge in allowing the farm to promote innovation activities aimed at the protection and the increment of the number of heads of Ottonese breed.
Specifically, the main results of the plan achieved were:
1- the number of productive animals has been increased thanks to the Plan activities;
2- milk from Ottonese breed from Delmolino farm was characterised from a chemical, nutritional and technological point of view, this information was essential for the valorisation of the milk itself and of the productions as there are no data available in the literature,
3- the feasibility of producing three fresh (unseasoned) dairy products that can be produced on the farm was assessed. These producst may constitute an additional income source for the farmer .

L'obiettivo del Piano di innovazione Convenient è stato quello di creare le condizioni per l'incremento e la conservazione della razza Ottonese grazie alla valorizzazione delle produzioni lattiero casearie migliorando la sostenibilità economica dell’azienda agricola incentivandola a proseguire il ruolo di conservazione della razza.
Gli obiettivi specifici miravano a mantenere e/o aumentare il numero di bovini in azienda e la produzione di latte, valorizzandola dal punto di vista qualitativo e valutando la fattibilità di trasformare il latte in prodotti freschi direttamente in azienda.
Sulla base degli obiettivi del Piano, i risultati ottenuti convergono nel permettere all'azienda di promuovere attività di innovazione finalizzata alla salvaguardia e/o ripopolamento della razza Ottonese. Nello specifico i principali risultati ottenuti sono:
1- duante lo svolgimento del piano si è incrementato il numero di capi di razza Ottonese nell'azienda Delmolino;
2- il latte della razza Ottonese prodotto dall'azienda Delmolino è stato caratterizzato dal punto di vista chimico, nutrizionale e tecnologico. Quest'informazione è essenziale per la valorizzazione del latte stesso e delle produzioni in quanto non ci sono dati disponibili in letteratura,
3-è stata valutata la fattibilità di produzione di tre prodotti lattiero caseari freschi (non stagionati) in grado di essere prodotti nell'azienda agricola e di costituire una fonte ulteriore di sostentamento per l'allevatore.

Description of the context of the project:

The objectives of the Plan are consistent to PEI strategy "Agricultural Productivity and Sustainability" especially with the directions of two focus groups: "Genetic Resources - Cooperation models" and "Innovative Short Food Supply Chain management." The first one aims to identify and document the priorities for further research, in particular for breeding. In addition, from 'emphasis on the promotion and development of breeds suited to marginal areas. The second identifies those models that substantially improve the incomes of farmers who have the potential to gradually increase the number of producers involved and the volumes traded.
