How to prepare

Inspired by GIs: Kalix Löjrom PDO, Sweden


Ingredients

  • 200 g Kalix Löjrom PDO
  • 200 ml sour cream
  • 2 medium-sized red onions
  • 1 sprig of dill
  • 500 g boiled potatoes
  • 100 g butter
  • 300 ml whipped cream (40%)
  • salt
  • nutmeg

Instructions

    Strain the sour cream for 30 minutes until firm.

  • Mash the potatoes with butter.
    Add the whipped cream, a pinch of salt and the nutmeg.
    Stir well.

  • For the garniture, chop the red onions and the dill.

    Add Kalix Löjrom PDO on the mashed potatoes.
    Add some sour cream, the chopped red onions and the dill.

  • Serve immediately.

Kalix Löjrom PDO, the roe of vendace, are the eggs of this small salmonid fish species. The fish is sourced from a specific part of the Gulf of Bothnia, delimited at sea by the Torneå river estuary to the north and the Åby river estuary to the south, and extending no more than 40 km from the coast.

What makes Kalix Löjrom PDO instantly recognisable is its unique orange pigmentation: the colour scale S2070-450R according to the Swedish national colour scheme. The vandace special feed explains this unique feature and sets it apart from other freshwater species in this specific geographical area.
