The OILPULSE project is developing an innovative method for olive oil extraction based on the use of electricity: olives are squeezed after receiving an electrical shock.
The electric current enlarges the olives' pores and allows more oil to be extracted from the heart of the fruit, making the production of oil simpler and more efficient.
The EU is providing almost €920,000 to support the project.
