Training on food hygiene and controls aims to increase expertise in food safety issues at all stages of production, processing and distribution of meat, milk and fish. It targets EU and candidate countries' national control staff that checks if businesses comply with EU rules. Places are available for official staff from the European Free Trade Association, European Neighbourhood Policy and select non-EU countries.

EU rules ensure the hygienic production and proper control of foodstuffs throughout the food chain:

  • Animals intended for food must be clean at slaughter;
  • Food chain information must be provided;
  • Meat inspections must be risk-based.

EU rules cover game meat, detection of bio-toxins in fishery products, microbiological criteria and raw milk production.
