Pisces Responsible Fish Restaurants is a restaurant-led initiative that, since 2004, has sought out and linked good fishermen with chefs. While much has been said about sustainable fisheries, practical issues still make it difficult for chefs to get better fish onto plates. The fish they supply has to be of exceptional, sashimi grade, quality. They insist on photographing and videoing at sea, and putting the results up for everyone to see for themselves.
