Determination of bioactive molecules by different analytical approach

The research is focused on development of typical foods and their by-products through the characterization of naturally occurring bioactive molecules, on their influence on the organoleptic properties, on enhancing the product shelf life and on evaluate the bioactive compounds persistence and retention in formulated foods.
In particular, the phenolic content on foods will be determined to evaluate the effectiveness of the inclusion and their functionality after the technological operations necessary to obtain the studied foods and their effect on the food shelf-life.
The evaluation of shelf-life will be carried through the monitoring of lipid oxidation and the antioxidant effect that phenols and other bioactive compounds.
The analysis will be performed either by the typical indices, by chromatographic techniques such as HPLC-DAD, HPLC-FLD, HPLC-MS, GC-MS and capillary electrophoresis and by using non-destructive techniques FT-IR, MIR, RAMAN.
