Development of probabilistic models to estimate quality and safety changes during production, transport, storage and consumption of convenience Ready-To-Eat (RTE) foods.

The Project aims at developing probabilistic models to be incorporated into an exposure assessment framework for selected RTE foods and hazards. Firstly, a revision and ‘mapping’ of critical factors affecting safety and quality of RTE to be included in the models will be achieved. The most relevant food chain steps will be selected to develop predictive models (survival and growth). Afterwards, estimation of potential Food Safety Criteria will be implemented in a structured guideline for industries. Variability and uncertainty sources will be identified through the estimation of statistical approaches (e.g. Bayesian networks, method of moments) and simulation techniques (e.g. MonteCarlo). The information generated will be implemented into an IT tool that will be available for food industries to optimize the safety and quality of RTE foods.
