The aim of the research is primarely the assessment of the biological risk in fruits and vegetables product and the establishment of IV range, and expecially of I range, horticultural production standards through the characterization of their flora across the supply chain, and the study of the microbial growth dynamics. Further research’s objective is the improvement of health and hygiene issues in fruits and vegetables product through the development of technical-managerial tools or methodologies available to food operators as self-control tools within the supply chain. Furthermore, the data collected will contribute to further scientific elaboration towards food safety control planning.
