The project PROINNO_BIT aims to promote the innovation of Apulian-targeted food industry through the achievement of: (i) novel food; (ii) food improved in relation to nutritional, sensorial, safety and shelf-life aspects; and (iii) innovative solutions applied to the production lines. The proposed innovations will positively influence the overall characteristics of the products.
The innovative proposals based on biotechnological solutions aim to explore the role of and to increase the value of the microbial starters used for fermentation of the raw vegetable matrices (e.g. cereals). The innovative proposals based on technological solutions aim at exploring and setting-up food processing solutions which allow an improved shelf-life (e.g. fresh, sliced and packaged drum wheat-based bread, characterized by a prolonged shelf-life).
