This research project is focused on the determination of biological active compounds in food directly or indirectly designed for human being or in natural animal or vegetable matrixes. Advanced chromatographic techniques coupled to detectors for the structural determination and quantitative dosage of the selected molecules will be used to develop innovative analytical methodologies for qualitative and quantitative determination of these active compounds in foodstuffs and natural matrixes. The aim of the present research program is to improve the knowhow on the quality of the foodstuff and their safety for the human health. In the same time, the research will intend to identify natural compounds as potential active principles for improvement of the nutritional and toxicological properties of human foodstuff
