The research deals with the pre-and post-harvest management of pome fruits. In order to identify the most appropriate cultural techniques to improve the quality of the fruit, innovative techniques and tools that allow to design the structure of the plant and the position of the fruit on the plant itself will be used. The system of "modeling" Plant Tons can reproduce the structure of the tree. The fruits will be also characterized for their ripening stage in a non-destructive with the DA-Meter. This instrument also allow to perform the forecasting of the harvest time, of the yield and of the fruit quality and, thanks to a function of the instrument, to know the distribution of the homogeneity of fruit ripening. This will be achieved with on the basis of the Index provided by DA DA-Meter and the fruits will be sent to the packing house. In post-harvest condition a further grouping of the fruit on the basisi of their ripening stage will be obtainde thanks to the a stationnary DA-Meter .
