Development of new enological starters obtained using autochthonous yeast strains to enhance the specific characters of Venetian wines

The present research fellowship position FSE will be focused on the following research activity:
Development of a new enological starter using autochthonous yeast strains isolated from the Raboso Piave vineyards; genetic selection and characterization of the yeast strains will be performed using next generation sequencing technologies. 30% of the research activity will be done at the headquarters of the industrial partner (Pololab) (Oderzo – TV); the aim will be the physiological characterization of the yeast strains selected in the first step using fermenters and the production of the starter itself.
