From sheep to cheese: traceability and trackability of products in the cheese factories of Tuscany.

The survey will start with an initial phase dedicated to the choice of the farms to be included in the project. After that, farms data will be collected in order to ascribe specific codes of the main productive factors to each sample. Milk and cheese collection (at different stages of seasoning) will be realized during a complete productive season. The samples, uniquely identified with special adhesive label, will be collected in double and they will be transported to the lab in order to realize the following determination: a. lactodynamographic parameters of milk and proximate analysis of cheese (DiBA); b. proximate analysis of milk and microbiological quality of cheese (IZSLT). Information coming from the survey will allow the creation of nutritional tables to be placed on the labels. In the framework of the project the fellow will be engaged in all the phases and mainly on farms survey, sampling, lab analysis and data management
