“Wheat and human health: bioactive peptides and polyphenols for a new quality concept”

Common wheat and its derived products may be certainly considered as health-promoting food, as demonstrated by the association between whole grain consumption and reduced incidence of chronic diseases in humans. Among the pytochemicals that can be found in wheat grain, bioactive peptides exert important biological functions, through the interaction with human cardiovascular, endocrine, immune and nervous systems, and present strong anti-inflammatory and anti-cancer activity. The main objective of the research is to identify cereal varieties rich in bioactive compounds for the production of an “healthy bread”, focusing particular interest on the prevention of chronic-degenerative pathologies. The characterization of the nutraceutical composition of staple foodstuff (i.e. bread) represent a crucial step for the development of functional food aimed at preventing human diseases.
