New canopy management technique to couple sugar and phenolic ripening of grapes.

The research project’s aim is the evaluation of some canopy management techniques on “coupling” the sugar and phenolic ripening of Sangiovese grapes. Considering that anti-transpirant spray on the canopy and trimming functional leaves can reduce vine’s photosynthetic activity, it will be evaluated the effectiveness of these treatments on sugar accumulation and on the composition of phenolic compound in berries skin and seeds (anthocyanins and tannins).
It will be also evaluated the photosynthetic activity of leaves treated with anti-transpirant and of leaves remained on the plants after the trimming.
The fellow student will deepen the evaluation of the effects of management techniques applied in the vineyard according agronomical, biochemical and enological multidisciplinary approach.
