Volatile compounds in food: sensory and instrumental conjoint analyses

Specific and representative foodstuffs will be purchased by the main market distributors/retailers or by the companies directly involved in the research. Sensory analysis by several tests (descriptive, discriminant and consumer test) will be applied on these set of samples. Based on the identification of specific sensory descriptors able to characterize positive and negative aspects of the food product, samples will be also analyzed by diagnostic instrumental tools to evidence the main molecules responsible for sensory notes perceivable during the olfactive (volatiles) and gustative (polyphenols) phases. The conjoint sensory-instrumental information will be elaborated by multivariate techniques with the aim to define possible reference standard useful for the training of the sensory panel and for instrumental analysis. These reference standards will be fundamental to assure the quality of the food product in an objective and unambiguous way.
