Study of antioxidant activity (AA) of durum wheat and grain derived products.

The research studies AA of durum wheat and grain products, to its healty properties linked to high and peculiar phytochemical and their antioxidant capacity.AA study will be conducted with an innovative approach on three different levels of action.1)Initial sceening trough rapid methods,such as TEAC and /or DMPD 2)A detailed studyof AA with methods ORAC and/or LOX/RNO, of more interesting samples.3)Evaluation of biological effects (study of sub-cellular effect systems and blood AA) using ORAC and/or an innovative ORAC LOX method of the most important samples identified in Step 2.This approach will provide more useful information to asses nutraceutical/healty effectiveness of durum wheat.
